The Philadelphia roll or Philly roll was created by Madame Saito, affectionately known as “the queen of sushi,” at her restaurant in — you guessed it — Philadelphia. The sushi roll, which is filled with smoked salmon and cream cheese — is one of the most popular sushi options in the United States today. Saito has said that she came up with the concept for her now-famous sushi roll while having breakfast at the home of a Jewish couple, who served lox and cream cheese. Inspired, she unveiled her creation at a cuisine competition at Longwood Gardens in the 1980s. Reportedly, she officially gave it the name “Philly roll” in front of the crowd attending the competition. The Philly roll soon spread beyond Philadelphia and is now a national favorite all across the United States, although you’ll be hard-pressed to find an equivalent in Japan, as it is a distinctly American offering. Today, Saito teaches sushi-making classes in Philadelphia while her most famous creation remains a beloved favorite and sushi menu staple all over the country.
