Bibb lettuce was created in the 1860s by John Bibb, a Kentucky lawyer who developed the variety of butterhead lettuce at his Frankfort home. It was originally called "limestone lettuce," but the name was later changed to honor its cultivator. Although Bibb lettuce was first cultivated in the mid-1800s, it wasn’t available commercially until roughly a century later, and it didn’t become widely popular until relatively recently. Today, it is used in salads and prized for its delicate, buttery-tasting leaves. It is also frequently used to make gluten-free wraps and tacos.
