First launched back in St. Louis in 1929 under the name Bib-Label Lithiated Lemon-Lime Soda, 7UP evolved into a popular soda option as the century went on. But how did it end up in a cake? While the origins of 7UP cake are murky, we do know that the citrusy, super-moist Bundt cake gets its name because it is made with — you guessed it! — 7UP soda. The addition of soda to cakes adds lift and flavor and has long been used in Southern cooking. In 1953, 7UP capitalized on this by publishing a recipe for 7UP cake in a promotional booklet. The recipe — and grassroots versions of it — quickly took off in the latter half of the 20th century. While 7UP cake isn’t as popular today as it once was, the recipe is widely available online and is still baked regularly, especially in the South.
